Pepper Branch Park
I made a grape pie for Agnes & Sherman. Lori & William went with me to deliver it. They weren't home so I called to see where they were -- fishing at Pepper Branch Park. So, we delivered their pie to them there. Earlier, Sherman had caught a 4 lb. bass. Nothing that exciting while we were there, but William did finally get to see a duck!
Billye's Peach Cream Cake
1 (7-inch) loaf angel food cake
1 (14-ounce) sweetened condensed milk
1 cup cold water
1 (3 1/2 ounce) instant vanilla pudding
1 teaspoon almond extract
2 cups whipping cream, whipped
4 cups sliced fresh peaches OR
1 (20 ounce) frozen sliced peaches, thawed

Cut cake into 1/4" slices; arrange half the slices on bottom of 13x9-inch baking dish. In large mixer bowl, combine milk and water; mix well. Add pudding mix; beat until well blended. Chill 5 minutes. Stir in extract; fold in whipped cream (I used Cool Whip). Place half the peaches over cake. Spread half the cream mixture over that. Repeat. Chill 4 hours or until set. Cut into squares to serve. This may be made a day or two before serving. It actually gets better and better chillin' in the fridge.
Debby's Squash Fritters & Joe's Garden-Grown Salsa
Debby's Fritters
2 tablespoons vegetable oil
1 egg, beaten
2/3 cup milk
1/2 cup self-rising cornmeal
1 cup packed grated yellow squash or zucchini
2 tablespoons grated onion
2 tablespoons sour cream
2 tablespoons finely shredded Parmesan cheese
1/4 teaspoon cayenne pepper
1/2 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons vegetable oil
1 egg, beaten
2/3 cup milk
1/2 cup self-rising cornmeal
1 cup packed grated yellow squash or zucchini
2 tablespoons grated onion
2 tablespoons sour cream
2 tablespoons finely shredded Parmesan cheese
1/4 teaspoon cayenne pepper
1/2 teaspoon salt
1/4 teaspoon black pepper
Combine all ingredients. (I didn't add the cayenne pepper since Joe's salsa was pretty hot. I also added more corn meal since it seemed too runny). Heat oil in a large skillet over medium heat. spoon 1/4 cup batter per fritter into skillet. Cook until golden, about 4 minutes on first side and 2 minutes on second side. Repeat with remaining batter. Serve with salsa. Serves 4 as an entree; 8 as a side.

3 large tomatoes, peeled and chopped
(drain extra juice and drink - that's what Joe did)
1 large onion, chopped
1 green bell pepper, chopped
1/3 bunch cilantro, chopped
3 cloves garlic, minced
1 jalapeno pepper, minced
2 teaspoons salt
3 tablespoons lemon juice
(may use lime juice)
Mix together and enjoy!

Mammie's Grape Pie
I posted a picture back in May of the first grape pie that we made. Gracie's grandmother sent us some filling that she had frozen last summer. We used a pre-made crust. This recipe is made with fresh grapes and homemade pie crust. The first one we made was good. This one is great!
Slip skins from 1 1/2 pounds (4 cups) Concord grapes; set skins aside. Bring pulp to boil; reduce heat; simmer, uncovered, 5 minutes. Sieve to remove seeds. Add skins.
Mix 1 cup sugar, 1/3 cup flour, and 1/4 teaspoon salt. Add 1 tablespoon lemon juice, 2 tablespoons melted butter, and grape mixtures. Pour into 9" unbaked pastry shell. Bake at 400 degrees for 25 minutes. (If using a glass dish, reduce heat to 375 degrees).
Meanwhile, sift 1/2 cup flour with 1/2 cup sugar. Cut in 1/4 cup butter till crumbly. Sprinkle atop pie and bake 15 minutes more until golden brown.

Jo Burby's Standard Pastry (8 or 9 inch - 1 crust)
1/3 cup plus 1 tablespoon shortening
1 cup flour
1/2 teaspoon salt
2 - 3 tablespoons ice cold water
1/3 cup plus 1 tablespoon shortening

2 - 3 tablespoons ice cold water
Cut shortening (I use Crisco) into flour and salt mixture. Sprinkle in water 1 tablespoon at a time. Toss with fork until pastry almost cleans side of bowl. Gather into a ball. Shape into flattened round on floured board and roll 2" larger than inverted pie plate. Place in the pie plate and flute the edges. Add filling.

Camp Nonnanee
Snake Killer
Yes. He shot one. With Layla, Kennedy, & Madison cheering.
Shot it's head right off. That night, Joe asked one of the twins
what had been her favorite part of the day. Her answer:
