Debby's Squash Fritters & Joe's Garden-Grown Salsa

Debby's Fritters

2 tablespoons vegetable oil
1 egg, beaten
2/3 cup milk
1/2 cup self-rising cornmeal
1 cup packed grated yellow squash or zucchini
2 tablespoons grated onion
2 tablespoons sour cream
2 tablespoons finely shredded Parmesan cheese
1/4 teaspoon cayenne pepper
1/2 teaspoon salt
1/4 teaspoon black pepper

Combine all ingredients. (I didn't add the cayenne pepper since Joe's salsa was pretty hot. I also added more corn meal since it seemed too runny). Heat oil in a large skillet over medium heat. spoon 1/4 cup batter per fritter into skillet. Cook until golden, about 4 minutes on first side and 2 minutes on second side. Repeat with remaining batter. Serve with salsa. Serves 4 as an entree; 8 as a side.

Joe' s Salsa

3 large tomatoes, peeled and chopped
(drain extra juice and drink - that's what Joe did)
1 large onion, chopped
1 green bell pepper, chopped
1/3 bunch cilantro, chopped
3 cloves garlic, minced
1 jalapeno pepper, minced
2 teaspoons salt
3 tablespoons lemon juice
(may use lime juice)

Mix together and enjoy!
